Pizza Pretzel Bites

Football season has finally arrived! My favorite time of the year! For the next few months I will be posting game day foods that everyone in the family will love. First up, Pizza Pretzel Bites.  
I created these after the first time I made pretzel bread. The bread recipe was incredibly soft and so easy to make, I thought why not stuff it? Feel free to get creative with these. 
(Broccoli and cheddar cheese probably wouldn't be half bad or a Cordon Bleu filling.)

1 1/2 cups warm water
2 tablespoons light brown sugar
1 package active dry yeast
6 tablespoons unsalted butter
2 1/2 teaspoons salt
4 1/2 to 5 cups all-purpose flour
Canola oil
2 packages-pepperoni slices, cut into small pieces
4 cups shredded mozzarella cheese
5 quarts water
3/4 cups baking soda
1 whole egg beaten with 1 tablespoon cold water
Coarse sea salt
Pizza sauce for dipping

In a stand mixer fitted with a dough hook, mix together the water, sugar, yeast, and butter.  Let sit for 5 minutes.

Add the salt and flour to the yeast mixture.  Knead dough at medium speed until a smooth and elastic ball forms, 3 to 4 minutes.  If dough is sticky, add 1 tablespoon of flour at a time until dough comes together.

Transfer the dough to a lightly oiled large bowl and turn the dough to coat with the oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.  Turn out the dough onto a lightly floured surface.  Divide into 8 equal pieces. Roll each piece into a 21 inch rope.  Cut the dough into 3 inch pieces to make the bites.

Roll each bite flat with a rolling pin.

Stuff with pepperoni and cheese

Fold over the dough and pinch the ends until the are completely sealed. Place on a baking sheet and continue until all the bites are made.

Preheat oven to 425 degrees.  In a large pot, bring water to a boil. Add the baking soda very slowly.  It will bubble up, a lot.  Lower heat to a simmer. Carefully boil bites in batches.  Boil for 15 seconds on each side.

Remove the bites from the water with a slotted spoon. Drain as much water as possible from the spoon before transferring bites to a baking sheet lined with parchment paper.

Brush the tops with the egg wash and season with sea salt.

Bake for 15 to 18 minutes or until golden brown.

Serve warm with pizza sauce.

This recipe makes roughly 4 dozen pizza bites. They are freezer friendly if you'd like to save some for later.
Cool the bites completely before transferring to a freezer safe resealable bag.  Remove all the air from the bag before sealing and lay flat in the freezer.

Thaw in the refrigerator before reheating in the microwave or oven.
