These burritos were created after I finally got tired of hearing my husband complain how hungry he is at 10pm...every single night, and that "there's no food in the house." (I don't buy snacks.) Usually by ten, I'm in bed already or headed to bed. No wife wants to cook another dinner for their husband that late at night. So, this month I'm getting ahead of the game. I'm creating easy freezer friendly meals that can be enjoyed for those late night cravings or for those times when you "forget" to cook dinner. I do that a lot!
1 (15-ounce) can Pinto Beans, drained and rinsed
2 cups cooked, chopped Chicken
2 cups shredded taco cheese
7 ounces salsa
1 tablespoon taco seasoning
12 burrito-size tortillas
In a large bowl, combine beans, chicken, cheese, salsa and taco seasoning.
Lay out tortillas and divide mixture evenly in the middle of each.
Roll up the tortilla tucking in the sides as you go.
The tortillas can be placed in a zip lock freezer bag and can be frozen immediately. Before placing them in the bag wrap each burrito in plastic wrap, to prevent the burritos from sticking.
Or, enjoy them right away. Heat in the oven or over a hot griddle until they are crisp on both sides.
Frozen burritos can be reheated in the microwave, oven or griddle.
