Italian Chicken and Rice

Another budget friendly recipe.  I came up with this one when Hubby and I first moved to Florida and money was extremely, extremely tight.  It is now one of his favorite meals I make.  Perfect meal for 2 people.

Italian Chicken with Rice


Ingredients
1 cup rice uncooked (I usually make more. Hubby loves rice)
2 boneless skinless chicken breast, sliced or diced
1 can diced tomatoes, undrained
1/2 cup Italian Dressing
salt and pepper to taste

Directions
Cook rice according to package directions (we use minute rice). In a separate pan cook the chicken and season with salt and pepper. Once the chicken is fully cooked, add the tomatoes and dressing to the same pan as the chicken.  Reduce heat to medium low and simmer for 5 minutes.  Serve chicken and sauce over rice.
