Cheesecake Shooters

Last night Hubby and I celebrated Valentine's Day. We were stuck in an airport trying to get home on the actual day, which wasn't very fun. But at least we were together :).
The menu for last night was a classic slow cooker pot roast with red potatoes, carrots, and celery. For dessert, I made us Cheesecake Shooters with a strawberry topping. Cheesecake Shooters can be topped with any fruit, even cherry and apple pie filling. Yum.
I served the shooters in wine glasses to give it a romantic feel. The cheesecake filling only takes 2 simple ingredients! Have fun with this recipe, it's delicious! This is the perfect dessert if you're having a dinner party, or for whenever you need a cheesecake fix without making an entire cheesecake.

Strawberry Cheesecake Shooters 

2 (8oz) packages of cream cheese, softened
1 (14oz) can of sweetened condensed milk
1 sleeve graham crackers, crushed
Strawberries, sliced

In a stand mixer with the wire whisk attachment, combine cream cheese and sweetened condensed milk on medium speed, until whipped (about 1-2 minutes). Place the cream cheese mixture into a plastic bag with the corner snipped off. (I didn't put all of the cheesecake batter into the bag, I put 3/4 of it into a bowl, covered, in the refrigerator since I was only making 2 shooters. This recipe makes a lot.)
Take your wine glasses, or whatever glass you are using and spoon in a layer of graham crackers.  Use the piping bag you just made, and pipe a layer of the cheesecake batter on top of the graham crackers. Top with sliced strawberries or whatever fruit you are using and sprinkle with remaining graham crackers.
